Mark Tolley Addresses Rotary on Tolley Farms Beef

The special guest speaker for the February 1, 2022, Lexington Rotary Club meeting was Mark Tolley of Tolley Farms Beef. Mark has been a resident of Henderson County all his life, and lives on the farm bought by his great-grandfather in 1949. He has a degree in criminal justice and worked in law enforcement until 2007. In 2020 he started working full time on the farm with his father.
Many of the 1,300 cattle raised annually are shipped to Kansas, but Mark said that they started specializing in freezer beef for neighbors and church members, and that aspect of the market has continued to grow. The average weight is about 1,400 pounds, and they processed 207 cattle last year.
